For the 4th of July, I went down to Manhattan Beach with a couple of friends and spent the entire day there. I wanted to bring some baked goods for everyone to enjoy throughout the day and decided to bake Andes mint chocolate cookies. Everyone who had one enjoyed them, and these are always a hit among the mint chocolate lovers. I particularly like this recipe because the cookies are actually made of chocolate, rather than cocoa powder. They also remained soft for days, although they never last that long. :) Hope everyone had a good 4th!
