Maybe I should have called it really thick icing? The flavor was right on though. I made caramels a couple of years ago, the experience was not rewarding. After standing there for 45 minutes stirring and stirring w/my candy thermometer inserted just so they turned out rock hard. I, myself, prefer a soft caramel. Have you ever made any of those?
